Why are my iPhone photos HEIC?

iPhones save photos as HEIC by default because the files are about half the size. The catch is that many Windows apps and websites can't open them.

JPG for almost everything, it works everywhere and the files are smaller. PNG if you want to keep every pixel and do not mind a bigger file.

Why is it slower on my phone?
